Apple Cider Cookies

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar
  • 1 cup powdered sugar (for glaze, optional)
  • 2 tablespoons apple cider (for glaze, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Beat in the egg, then add apple cider, vanilla extract, and apple cider vinegar; mix well.
  5. Gradually add dry ingredients to the wet mixture and stir until just combined.
  6. Drop tablespoon-sized dough balls onto the prepared baking sheet, spacing about 2 inches apart.
  7. Bake for 10-12 minutes or until edges are lightly golden.
  8. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. Optional: Mix powdered sugar and apple cider to create a glaze and drizzle over cooled cookies.

Notes

For an extra burst of apple flavor, add finely chopped dried apples or a sprinkle of cinnamon sugar on top before baking.
