Artichoke Sandwich

A fresh and flavorful Artichoke Sandwich featuring marinated artichokes, creamy cheese, and crisp greens on toasted bread, perfect for a light lunch or snack.

Ingredients

  • 4 slices of ciabatta bread
  • 1 cup marinated artichoke hearts, drained and chopped
  • 4 tablespoons cream cheese
  • 1/2 cup fresh spinach leaves
  • 1 small tomato, sliced
  • 2 tablespoons roasted red peppers, sliced
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat a grill pan or skillet over medium heat.
  2. Lightly brush the ciabatta bread slices with olive oil.
  3. Spread cream cheese evenly on two slices of bread.
  4. Top the cream cheese with chopped marinated artichoke hearts, spinach leaves, tomato slices, and roasted red peppers.
  5. Season with salt and black pepper to taste.
  6. Place the remaining bread slices on top to form sandwiches.
  7. Grill the sandwiches in the pan for 3–4 minutes on each side, or until the bread is toasted and golden brown.
  8. Remove from heat, slice in half if desired, and serve warm.

Notes

For an extra burst of flavor, add a splash of balsamic glaze or your favorite pesto spread before assembling the sandwich.
