Asparagus Zucchini Squash

A vibrant and healthy sauté of fresh asparagus, zucchini, and yellow squash, perfect as a light side dish or vegetarian main.

Ingredients

  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon lemon juice (optional)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add asparagus pieces and cook for 4-5 minutes, stirring occasionally.
  4. Add zucchini and yellow squash slices; continue to sauté for another 5-6 minutes until all vegetables are tender but still crisp.
  5. Season with salt, pepper, and lemon juice if using.
  6. Remove from heat and garnish with fresh parsley before serving.

Notes

For added flavor, sprinkle some grated Parmesan cheese or toasted pine nuts on top before serving.
