Freshly Made Avocado Pasta Salad

This creamy Avocado Pasta Salad is a quick and easy meal that’s perfect for lunch or a light dinner. Fresh avocado creates a delicious sauce that coats the pasta, making it both healthy and satisfying.

Ingredients

  • 1 pound pasta (rotini, penne, or your favorite shape)
  • 2 ripe avocados, pitted and peeled
  • 1/4 cup fresh basil leaves
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water. Set aside.
  2. While the pasta is cooking, combine avocados, basil, garlic, olive oil, lemon juice, and Parmesan cheese in a food processor or blender. Blend until smooth and creamy.
  3. Season the avocado sauce with salt and pepper to taste.
  4. In a large bowl, combine the cooked pasta, avocado sauce, cherry tomatoes, and red onion. Toss until well coated.
  5. Serve immediately or chill for later.
