These Banana Nut Bagels are a delightful twist on a classic favorite, combining the natural sweetness of ripe bananas with crunchy nuts for a wholesome breakfast or snack.

Ingredients

  • 2 ripe bananas, mashed
  • 2 ½ cups all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • ½ cup warm water
  • 2 tbsp honey
  • ¼ cup chopped walnuts or pecans
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 tbsp vegetable oil
  • 1 egg white (for egg wash)

Instructions

  1. In a small bowl, dissolve yeast in warm water and let it sit for 5 minutes until frothy.
  2. In a large bowl, combine mashed bananas, honey, cinnamon, salt, and oil.
  3. Add the yeast mixture to the banana mixture and stir well.
  4. Gradually add the flour, mixing until a dough forms.
  5. Knead the dough on a floured surface for about 8 minutes until smooth and elastic.
  6. Fold in the chopped nuts evenly into the dough.
  7. Place dough in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.
  8. Divide dough into 6 equal pieces and shape each into a ball.
  9. Poke a hole through the center of each ball and gently stretch to form bagels.
  10. Preheat oven to 425°F (220°C). Boil a large pot of water.
  11. Boil each bagel for 1 minute on each side, then transfer to a baking sheet lined with parchment paper.
  12. Brush bagels with egg white and bake for 15-20 minutes until golden brown.
  13. Remove from oven and let cool before serving.

Notes

For extra flavor, sprinkle a little cinnamon sugar on top before baking or serve toasted with cream cheese.
