Basketball Ice Cream Cookie Sandwiches

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup mini chocolate chips
  • 1 pint vanilla ice cream
  • Orange food coloring
  • Black decorating gel or melted chocolate for basketball lines

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in mini chocolate chips and orange food coloring until the dough is evenly colored.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes, or until edges are lightly golden. Let cool completely on wire racks.
  9. Once cookies have cooled, spread or scoop vanilla ice cream onto the flat side of one cookie, then top with another cookie to form a sandwich.
  10. Use black decorating gel or melted chocolate to pipe basketball lines on the top cookie.
  11. Freeze sandwiches for at least 1 hour before serving.
