Beef and Macaroni Soup

  • 1 lb ground beef
  • 1 cup macaroni pasta
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic; sauté until softened, about 3 minutes.
  3. Add ground beef and cook until browned, breaking it apart as it cooks.
  4. Stir in diced carrots and celery; cook for 5 minutes until slightly tender.
  5. Pour in beef broth and diced tomatoes with their juice.
  6. Add oregano, basil, salt, and pepper; bring to a boil.
  7. Reduce heat and simmer for 15 minutes.
  8. Add macaroni and cook for an additional 8-10 minutes until pasta is tender.
  9. Adjust seasoning if needed and serve hot.
