Light and crispy Belgian waffles with a tender interior, perfect for a delicious breakfast or brunch topped with fresh fruit and syrup.

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs, separated
  • 1 3/4 cups milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat egg yolks, then add milk, melted butter, and vanilla extract; mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. In another clean bowl, beat egg whites until stiff peaks form.
  6. Gently fold the beaten egg whites into the batter, being careful not to deflate them.
  7. Spray the waffle iron with non-stick cooking spray and pour the batter onto the iron.
  8. Cook waffles until golden brown and crisp, about 4-5 minutes.
  9. Serve warm with your favorite toppings like maple syrup, fresh berries, or whipped cream.

Notes

For extra crispness, sprinkle a little sugar onto the waffle iron before cooking or serve waffles chilled and re-toasted.
