Black Bean Tacos

Delicious and nutritious black bean tacos packed with fresh vegetables and bold Mexican flavors, perfect for a quick and satisfying meal.

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt and pepper, to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • ½ cup diced tomatoes
  • ¼ cup chopped fresh cilantro
  • ½ avocado, sliced
  • 1 lime, cut into wedges
  • Optional: salsa or hot sauce, sour cream or Greek yogurt

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and cook until softened, about 3-4 minutes.
  2. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Stir in black beans, ground cumin, chili powder, smoked paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until beans are heated through and slightly mashed.
  4. Warm the tortillas in a dry skillet or microwave until pliable.
  5. Spoon the black bean mixture onto each tortilla.
  6. Top with shredded lettuce, diced tomatoes, cilantro, and avocado slices.
  7. Squeeze fresh lime juice over the tacos and add optional salsa, hot sauce, or sour cream if desired.
  8. Serve immediately and enjoy.

Notes

For added protein, try topping the tacos with crumbled queso fresco or a dollop of Greek yogurt instead of sour cream.
