  • 1/2 cup white chocolate chips
  • 2 tablespoons butter
  • 1/4 cup granulated sugar
  • 2 tablespoons corn syrup
  • 1/4 teaspoon red food coloring gel
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Pop the popcorn and remove any unpopped kernels. Place popped popcorn in a large bowl.
  2. In a medium saucepan, melt the butter over medium heat. Add the sugar and corn syrup and stir until dissolved.
  3. Bring to a simmer and cook for 2-3 minutes, stirring constantly.
  4. Remove from heat and stir in the red food coloring gel and vanilla extract. Add a pinch of salt.
  5. Pour the red velvet mixture over the popcorn and toss to coat evenly.
  6. Spread the popcorn in a single layer on a parchment-lined baking sheet.
  7. Melt the white chocolate chips in the microwave in 30-second intervals, stirring in between, until smooth.
  8. Drizzle the melted white chocolate over the popcorn.
  9. Let the popcorn cool completely until the chocolate sets. Break apart and serve.

Notes

For a richer flavor, use brown butter instead of regular butter. Add sprinkles before the white chocolate sets for an extra festive touch!
