Delicious Homemade Blueberry Pie

  • 1 box (14.1 ounces) refrigerated pie crusts
  • 6 cups fresh blueberries, rinsed and drained
  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 2 tablespoons lemon juice
  • 2 tablespoons butter, cut into small pieces
  • 1 large egg, beaten
  • 1 tablespoon milk
  • Coarse sugar, for sprinkling

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Line a 9-inch pie plate with one pie crust.
  3. In a large bowl, combine blueberries, granulated sugar, flour, and lemon juice. Stir gently to coat.
  4. Pour the blueberry mixture into the pie crust. Dot with butter pieces.
  5. Top with the second pie crust. Crimp the edges to seal and cut vents in the top crust.
  6. Brush the top crust with beaten egg and milk mixture. Sprinkle with coarse sugar.
  7. Bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, cover the edges with foil.
  8. Let cool completely before serving.
