Blueberry Thyme Chicken

A deliciously juicy chicken dish infused with fresh thyme and sweet blueberries, perfect for a flavorful weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon lemon juice

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes per side until golden and cooked through. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  4. Add blueberries, honey, chicken broth, thyme leaves, and lemon juice. Stir and let simmer for 5 minutes until sauce thickens slightly.
  5. Return chicken to the skillet, spoon sauce over, and cook for an additional 2 minutes to coat and heat through.
  6. Serve chicken topped with blueberry thyme sauce. Enjoy!
