Breakfast Nachos

  • 4 cups tortilla chips
  • 6 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked breakfast sausage, crumbled
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup sliced black olives
  • 1/2 avocado, diced
  • 1/4 cup salsa
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together eggs, milk, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat and scramble eggs until just set; remove from heat.
  4. Spread tortilla chips evenly on a large baking sheet.
  5. Sprinkle scrambled eggs, cooked sausage, diced tomatoes, green onions, and black olives over the chips.
  6. Top with shredded cheddar cheese.
  7. Bake in the oven for 8-10 minutes, until cheese is melted and bubbly.
  8. Remove from oven and top with diced avocado, salsa, and chopped cilantro.
  9. Serve immediately and enjoy your delicious breakfast nachos!

Notes

For a vegetarian version, substitute sausage with black beans or sautéed mushrooms.
