Broccoli Cheese Rice Casserole Perfection

This Broccoli Cheese Rice Casserole is a comforting and easy-to-make side dish or vegetarian main course. Creamy, cheesy, and packed with broccoli, it’s a family-friendly meal that’s sure to please.

  • 1 cup uncooked long-grain rice
  • 2 cups water
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup milk
  • 1/2 cup mayonnaise
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked broccoli florets
  • 1 1/2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook rice according to package directions.
  3. In a large bowl, combine the cooked rice, cream of mushroom soup, milk, mayonnaise, onion powder, garlic powder, salt, and pepper. Mix well.
  4. Stir in the cooked broccoli and 1 cup of shredded cheddar cheese.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  7. Bake for 20-25 minutes, or until golden brown and bubbly.
  8. Let stand for 5-10 minutes before serving.

Notes

For a richer flavor, use cream of cheddar soup instead of cream of mushroom. You can also add cooked chicken or ham for a heartier casserole.
