  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp butter
  • 1 tbsp vegetable oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • 1 tsp paprika
  • 1 cup tomato puree
  • 1/2 cup heavy cream
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked basmati rice, for serving

Instructions

  1. Heat the butter and oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  3. Stir in the garlic and ginger, cooking for another 1-2 minutes until fragrant.
  4. Add the cumin, coriander, garam masala, turmeric, chili powder, and paprika; cook for 30 seconds to toast the spices.
  5. Add the chicken pieces to the skillet and cook, stirring often, until they are browned on all sides.
  6. Pour in the tomato puree, stirring to combine. Reduce heat and simmer for 10-12 minutes until the chicken is cooked through.
  7. Stir in the heavy cream and simmer for another 3-5 minutes until the sauce is creamy and heated through.
  8. Season with salt to taste and garnish with chopped cilantro.
  9. Serve hot over cooked basmati rice.

Notes

For extra richness, add a tablespoon of crushed cashews or a splash of yogurt before serving. This dish pairs well with naan or steamed vegetables.
