  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/3 cup melted unsalted butter
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup butterscotch chips, melted
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Whipped cream, for topping (optional)
  • Butterscotch shavings, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of a 9-inch pie plate.
  3. Bake for 8-10 minutes, or until lightly golden brown. Let cool completely.
  4. In a separate bowl, whisk together sweetened condensed milk, melted butterscotch chips, heavy cream, vanilla extract, and salt until smooth.
  5. Pour butterscotch mixture into the cooled graham cracker crust.
  6. Refrigerate for at least 3 hours, or preferably overnight, to allow the pie to set.
  7. Before serving, top with whipped cream and butterscotch shavings, if desired.
  8. Slice and enjoy!

Notes

For an extra touch, sprinkle chopped pecans or walnuts over the top before refrigerating.
