Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 8 oz penne pasta
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts evenly with Cajun seasoning on both sides.
  2. Cook pasta according to package instructions, drain and set aside.
  3. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook 5-6 minutes per side until cooked through and golden brown. Remove and slice chicken.
  4. In the same skillet, melt butter and sauté onions, red and green bell peppers until tender, around 4-5 minutes.
  5. Add garlic and cook for an additional 1 minute until fragrant.
  6. Pour in chicken broth and heavy cream, stirring to combine. Let simmer for 3-4 minutes until sauce slightly thickens.
  7. Stir in Parmesan cheese until melted and sauce is creamy.
  8. Add cooked pasta and sliced chicken back to the skillet. Toss to coat evenly with sauce. Season with salt and pepper to taste.
  9. Garnish with fresh parsley and serve warm.

Notes

For extra heat, add a pinch of cayenne pepper or serve with crushed red pepper flakes on the side.
