Cajun Potato Soup

This hearty Cajun Potato Soup combines creamy potatoes with bold Cajun spices, delivering a comforting and flavorful dish perfect for any season.

  • 4 large russet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and black pepper to taste
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, sliced (for garnish)
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, celery, and bell pepper; sauté until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add diced potatoes, chicken broth, Cajun seasoning, smoked paprika, cayenne pepper, salt, and black pepper.
  4. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Use an immersion blender to puree the soup partially, leaving some chunks for texture. Alternatively, transfer half the soup to a blender, blend until smooth, then return to pot.
  6. Stir in the heavy cream and adjust seasoning if needed. Heat through but do not boil.
  7. Serve hot topped with crumbled bacon, sliced green onions, and shredded cheddar cheese if desired.

Notes

For a vegetarian version, substitute vegetable broth for chicken broth and omit the bacon topping. Serve with crusty bread for a complete meal.
