Experience a comforting classic with a spicy kick! These Cajun Scalloped Potatoes feature thinly sliced potatoes baked in a creamy, cheesy sauce infused with bold Cajun spices, perfect as a hearty side dish.

  • 2 lbs Russet potatoes, peeled and thinly sliced (about 1/8-inch thick)
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk, warmed
  • 1 tsp Cajun seasoning (or more, to taste)
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp smoked paprika
  • Pinch of cayenne pepper (optional, for extra heat)
  • 1 cup shredded sharp cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese, divided
  • 1/4 cup finely chopped green onions, for garnish (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Melt butter in a medium saucepan over medium heat. Whisk in flour and cook for 1 minute, stirring constantly, to form a roux.
  3. Gradually whisk in the warmed milk until smooth. Bring to a simmer, stirring, and cook until the sauce thickens, about 3-5 minutes.
  4. Remove from heat. Stir in Cajun seasoning, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and pepper.
  5. Stir in 3/4 cup of cheddar cheese and 1/4 cup of Monterey Jack cheese until melted and smooth.
  6. Arrange one-third of the sliced potatoes in a single layer in the prepared baking dish. Pour one-third of the cheese sauce over the potatoes.
  7. Repeat layers twice more, ending with a layer of potatoes topped with the remaining cheese sauce.
  8. Sprinkle the remaining 1/4 cup of cheddar cheese and 1/4 cup of Monterey Jack cheese over the top.
  9. Cover the baking dish loosely with aluminum foil and bake for 45 minutes.
  10. Remove the foil and bake for another 20-30 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
  11. Let stand for 10 minutes before serving. Garnish with chopped green onions, if desired.

For an extra layer of flavor and texture, sprinkle some crispy crumbled bacon or diced ham between the potato layers.
