These Caramel Apple Cheesecake Bars are a delightful fall treat! Creamy cheesecake filling swirled with sweet caramel and studded with tender apples.

  • For the Crust:
  • 1 1/2 cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • For the Filling:
  • 24 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • For the Apple Caramel Swirl:
  • 2 medium apples, peeled and diced
  • 2 tablespoons unsalted butter
  • 1/4 cup brown sugar, packed
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup caramel sauce, store-bought or homemade

Instructions

  1. Prepare the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9×13 inch baking pan.
  2. Bake the Crust: Bake for 8-10 minutes, or until lightly golden. Remove from oven and let cool slightly.
  3. Make the Apple Caramel Swirl: While the crust is baking, melt butter in a skillet over medium heat. Add diced apples, brown sugar, and cinnamon. Cook for 5-7 minutes, or until apples are tender. Remove from heat and set aside.
  4. Prepare the Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth and creamy. Beat in vanilla extract. Add eggs one at a time, beating until just combined. Be careful not to overmix.
  5. Assemble the Bars: Pour the cheesecake filling over the pre-baked crust. Drop spoonfuls of the apple caramel mixture and caramel sauce over the cheesecake filling. Use a knife or skewer to swirl the apple caramel and caramel sauce into the cheesecake filling.
  6. Bake the Cheesecake Bars: Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  7. Cool and Chill: Turn off the oven and let the cheesecake bars cool in the oven with the door slightly ajar for 1 hour. Then, remove from oven and let cool completely at room temperature. Cover and chill in the refrigerator for at least 4 hours, or preferably overnight.
  8. Serve: Cut into bars and serve cold.

Notes

For an extra touch, drizzle additional caramel sauce over the bars before serving.
