Caramelized Apple Samoas

Delight in these Caramelized Apple Samoas, a luscious twist on the classic treat combining caramelized apples, chewy caramel, and toasted coconut on a buttery cookie base.

  • 2 medium apples, peeled and diced
  • 2 tbsp unsalted butter
  • 1/4 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup caramel sauce
  • 1 cup shredded toasted coconut
  • 20 shortbread cookies
  • 1 cup semi-sweet chocolate chips
  • 1 tbsp vegetable oil

Instructions

  1. In a skillet, melt butter over medium heat. Add diced apples, brown sugar, cinnamon, and nutmeg. Cook for 8-10 minutes until apples are soft and caramelized. Remove from heat and let cool.
  2. Spread a thin layer of caramel sauce on each shortbread cookie.
  3. Top each cookie with a spoonful of the caramelized apple mixture.
  4. Sprinkle toasted shredded coconut generously over the apples.
  5. In a microwave-safe bowl, melt chocolate chips with vegetable oil in 30-second intervals, stirring until smooth.
  6. Drizzle melted chocolate over the coconut topping on each cookie. Optionally, dip half of the cookie in chocolate for extra indulgence.
  7. Place cookies on a parchment-lined tray and refrigerate for 30 minutes until chocolate sets.
  8. Serve chilled or at room temperature for a delicious treat.

Notes

For extra crunch, add chopped toasted pecans to the apple mixture or sprinkle on top before chilling.
