Freshly Baked Carrot Cake Oatmeal Cookies

These Carrot Cake Oatmeal Cookies combine the best of both worlds! Soft, chewy oatmeal cookies are studded with the flavors of carrot cake, making for a delicious and wholesome treat.

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats
  • 1 cup grated carrots
  • 1/2 cup raisins
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in rolled oats, grated carrots, raisins, and walnuts (if using).
  6. Drop by rounded tablespoons onto prepared baking sheets.
  7. Bake for 10-12 minutes, or until edges are golden brown.
  8. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For a cream cheese frosting drizzle, whisk together 4 ounces softened cream cheese with 2 tablespoons powdered sugar and 1 tablespoon milk until smooth. Drizzle over cooled cookies.
