Cattle Drive Casserole is a hearty, savory baked dish combining ground beef, potatoes, and rich seasonings for a comforting meal perfect for family dinners.

  • 1 lb ground beef
  • 2 cups diced potatoes
  • 1 cup chopped onions
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 2 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Add chopped onions and garlic; cook until onions are translucent.
  4. Stir in diced potatoes, salt, black pepper, and smoked paprika; cook for 5 minutes until potatoes start to soften.
  5. In a bowl, mix cream of mushroom soup, sour cream, and milk until smooth.
  6. Combine beef mixture and soup mixture together well.
  7. Transfer everything to a greased casserole dish and spread evenly.
  8. Sprinkle shredded cheddar cheese on top.
  9. Bake uncovered for 30-35 minutes, until cheese is melted and bubbly and potatoes are tender.
  10. Remove from oven and let stand 5 minutes before serving. Garnish with fresh parsley if desired.

For added flavor, try topping with crispy fried onions or serving with a side of steamed green beans.
