Ingredients

Scale
  • 2 pounds Yukon Gold potatoes, peeled and thinly sliced
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 cups shredded Gruyere cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute, creating a roux.
  3. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  4. Reduce heat and simmer for 5 minutes, or until the sauce has thickened slightly.
  5. Remove from heat and stir in salt, pepper, and nutmeg.
  6. Add Gruyere and cheddar cheese to the sauce, stirring until melted and smooth.
  7. Arrange half of the sliced potatoes in the prepared baking dish. Pour half of the cheese sauce over the potatoes.
  8. Top with the remaining potatoes and the remaining cheese sauce.
  9. Sprinkle Parmesan cheese evenly over the top.
  10. Bake for 50-60 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
  11. Let stand for 10 minutes before serving.

Notes

For a richer flavor, use heavy cream instead of milk. You can also add a clove of minced garlic to the butter when making the roux.
