This Cheesy Breakfast Casserole is a hearty and flavorful dish combining eggs, cheese, and savory breakfast sausage, perfect for a family brunch or a weekend treat.

  • 8 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 pound breakfast sausage, cooked and crumbled
  • 1/2 cup milk
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 cups cubed bread (day-old works best)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon dried parsley (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder until well combined.
  3. Add the cubed bread, cooked sausage, diced onion, bell pepper, and half of the shredded cheeses to the egg mixture. Stir gently to combine.
  4. Pour the mixture evenly into the prepared baking dish.
  5. Sprinkle the remaining cheese on top along with dried parsley if using.
  6. Bake for 35–40 minutes or until the casserole is set and the top is golden brown.
  7. Let it cool for 5 minutes before serving.

Notes

For added flavor, try topping the casserole with fresh chopped chives or serve with salsa and avocado slices.
