This Cheesy Green Bean Casserole is a comforting classic with a delicious, cheesy twist. It’s the perfect side dish for holiday gatherings or a cozy weeknight meal.

  • 1 pound fresh green beans, trimmed
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 8 ounces sliced mushrooms
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 1/3 cups crispy fried onions, divided

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Steam or boil green beans until tender-crisp, about 5-7 minutes. Drain well.
  3. While green beans are cooking, heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and mushrooms and cook until mushrooms are tender, about 5 more minutes.
  4. Stir in flour until smooth. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened, about 2-3 minutes.
  5. Remove from heat and stir in salt, pepper, and cheddar cheese until melted.
  6. Add green beans and 2/3 cup crispy fried onions to the cheese sauce and stir to combine.
  7. Pour mixture into a greased 9×13 inch baking dish.
  8. Top with remaining 2/3 cup crispy fried onions.
  9. Bake for 20-25 minutes, or until golden brown and bubbly.

Notes

For an extra layer of flavor, try adding a sprinkle of paprika to the top of the casserole before baking.
