Cheesy Potato Skins

These cheesy potato skins are a classic appetizer or snack, perfect for game day or a casual get-together. Crispy potato shells filled with melted cheese and your favorite toppings!

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup sour cream
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub potatoes and pierce each several times with a fork.
  3. Rub potatoes with olive oil, salt, and pepper.
  4. Bake for 45-60 minutes, or until tender.
  5. Let potatoes cool slightly, then cut in half lengthwise.
  6. Scoop out the potato flesh, leaving a 1/4-inch border. Reserve the scooped-out potato for another use (like mashed potatoes!).
  7. Brush the inside of each potato skin with olive oil and sprinkle with salt and pepper.
  8. Place potato skins on a baking sheet and bake for 10-15 minutes, or until crispy.
  9. Remove from oven and sprinkle with cheddar cheese and bacon.
  10. Bake for another 5 minutes, or until cheese is melted and bubbly.
  11. Top with sour cream and green onions before serving.

Notes

For extra flavor, add a sprinkle of garlic powder or onion powder to the potato skins before baking. Serve with your favorite dipping sauces, such as ranch or blue cheese dressing.
