  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cherry blossom extract
  • 2 tablespoons milk
  • Pink sanding sugar or edible cherry blossom petals for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and cherry blossom extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with milk, mixing until a soft dough forms.
  6. Roll dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
  7. Flatten each ball slightly with the palm of your hand and sprinkle with pink sanding sugar or gently press an edible cherry blossom petal on top.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a more intense cherry blossom flavor, chill the dough overnight before baking or add a light drizzle of white chocolate topping.
