  • 6 cups chicken broth
  • 2 cups egg noodles
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions, carrots, and celery, sautéing until vegetables are tender, about 5 minutes.
  2. Add minced garlic and cook for an additional 1 minute until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Add chicken breasts to the pot, reduce heat, and simmer for 15-20 minutes until chicken is fully cooked.
  5. Remove chicken breasts, shred them with two forks, and return shredded chicken to the pot.
  6. Add egg noodles, salt, pepper, and dried thyme. Cook for another 7-8 minutes until noodles are tender.
  7. Adjust seasoning as needed. Garnish with fresh parsley before serving.

Notes

For extra richness, stir in a splash of heavy cream just before serving or add a squeeze of fresh lemon juice for brightness.
