This creamy Chicken Alfredo Soup is a comforting and flavorful twist on a classic pasta dish. It’s packed with tender chicken, vegetables, and a rich Alfredo sauce, making it a perfect cozy meal.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1/2 cup milk
  • 1/2 cup frozen peas
  • 1/2 cup shredded mozzarella cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Season chicken with salt and pepper, then add it to the pot and cook until browned and cooked through. Remove chicken from the pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute, creating a roux. Gradually whisk in milk until smooth.
  4. Slowly pour the milk mixture into the pot with the onion and garlic, stirring constantly to prevent lumps.
  5. Stir in chicken broth and heavy cream. Bring to a simmer, then reduce heat and simmer for 10 minutes, stirring occasionally.
  6. Stir in Parmesan cheese and mozzarella cheese until melted and smooth.
  7. Add the cooked chicken and frozen peas to the soup. Heat through.
  8. Garnish with fresh parsley before serving.

Notes

For a richer flavor, add a pinch of nutmeg to the soup. Serve with crusty bread for dipping.
