4 cups cooked chicken, shredded
6 cups chicken broth
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
1 cup milk
1/4 cup unsalted butter, melted
2 celery stalks, chopped
2 carrots, diced
1 small onion, finely chopped
2 tablespoons fresh parsley, chopped
Salt and pepper to taste
Instructions
In a large pot, combine chicken broth, celery, carrots, and onion. Bring to a boil and then simmer until vegetables are tender, about 10 minutes.
Meanwhile, prepare the dumplings by mixing flour, baking powder, salt, and pepper in a bowl. Stir in milk and melted butter until a soft dough forms.
Add shredded chicken and parsley to the simmering broth. Season with salt and pepper.
Drop spoonfuls of the dumpling dough onto the simmering broth. Cover and cook for 15 minutes without lifting the lid, until dumplings are cooked through and fluffy.
Stir gently and serve hot, garnished with extra parsley if desired.
Notes
For an extra creamy texture, stir in a splash of heavy cream just before serving.
