This hearty Chicken and Potatoes Dijon Sauce recipe combines tender chicken and golden potatoes in a flavorful, creamy Dijon mustard sauce, perfect for a comforting dinner.

  • 4 boneless, skinless chicken breasts
  • 3 large potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/3 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Season chicken breasts with salt, pepper, and dried thyme.
  3. Brown the chicken breasts for 3-4 minutes per side until golden but not fully cooked. Remove from skillet and set aside.
  4. Add diced potatoes to the same skillet and cook, stirring occasionally, for about 5 minutes.
  5. Stir in minced garlic and cook for 1 more minute until fragrant.
  6. Pour in chicken broth and bring to a simmer, then stir in heavy cream and Dijon mustard until well combined.
  7. Return chicken breasts to the skillet, nestling them among the potatoes.
  8. Transfer skillet to the preheated oven and bake for 20-25 minutes until chicken is cooked through and potatoes are tender.
  9. Garnish with fresh parsley before serving.

Notes

For extra flavor, add a splash of white wine to the sauce before baking or serve with a side of steamed green beans.
