Chicken and Spinach Casserole

A comforting and nutritious casserole blending tender chicken, fresh spinach, and creamy cheese, perfect for an easy weeknight dinner.

  • 2 cups cooked chicken, shredded
  • 4 cups fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1 cup cream of mushroom soup
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onion and garlic until translucent.
  3. Add chopped spinach to the skillet and cook until wilted; season with salt and pepper.
  4. In a large bowl, combine shredded chicken, sautéed spinach mixture, cream of mushroom soup, sour cream, mozzarella, cheddar, and half of the Parmesan cheese. Mix well.
  5. Transfer the mixture to a greased casserole dish and spread evenly.
  6. Sprinkle the remaining Parmesan cheese on top.
  7. Bake uncovered for 25-30 minutes, until the casserole is bubbly and the top is golden brown.
  8. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra crunch, sprinkle breadcrumbs on top before baking, or serve with a side of crusty bread for a complete meal.
