chicken and zucchini bake

A simple and healthy chicken and zucchini bake that’s perfect for a wholesome dinner, featuring tender chicken breasts and fresh zucchini baked with herbs and cheese.

  • 2 boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a baking dish with olive oil.
  3. Season the chicken breasts with salt, pepper, oregano, and basil.
  4. Place the chicken breasts in the baking dish and arrange zucchini slices around them.
  5. Sprinkle minced garlic evenly over the chicken and zucchini.
  6. Drizzle olive oil over the vegetables.
  7. Top the chicken and zucchini with shredded mozzarella and Parmesan cheese.
  8. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and cheese is golden.
  9. Remove from oven and garnish with fresh parsley before serving.
