  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 2 cups cooked chicken, shredded
  • 1 cup cooked ham, diced
  • 1 cup Swiss cheese, shredded
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. In a separate small saucepan, melt butter over medium heat. Whisk in flour until smooth. Cook for 1-2 minutes, stirring constantly. This is your roux.
  3. Gradually whisk the roux into the pot with the onions and garlic. Stir until smooth.
  4. Slowly pour in chicken broth, stirring constantly to prevent lumps.
  5. Add milk and heavy cream. Bring to a simmer, stirring occasionally.
  6. Stir in shredded chicken, diced ham, and shredded Swiss cheese.
  7. Season with salt and pepper to taste.
  8. Simmer for 10-15 minutes, or until the cheese is melted and the soup has thickened slightly.
  9. Garnish with fresh parsley before serving.

Notes

For a richer flavor, use homemade chicken broth. Serve with crusty bread or croutons for dipping.
