This creamy and comforting Chicken Corn Chowder is packed with tender chicken, sweet corn, and savory vegetables. It’s the perfect easy and satisfying meal for a chilly day.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound boneless, skinless chicken breasts, cubed
  • 2 cups frozen corn
  • 1 cup diced potatoes
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley, for garnish
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more.
  3. Pour in chicken broth and add chicken, corn, potatoes, thyme, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until chicken is cooked through and potatoes are tender.
  4. Stir in heavy cream and salt to taste. Heat through.
  5. Garnish with fresh parsley and serve hot.

Notes

For a thicker chowder, you can mash some of the potatoes before adding the cream. Serve with crusty bread for dipping.
