Chicken Ginger Rice

Chicken Ginger Rice is a flavorful, comforting one-pot meal combining tender chicken, aromatic ginger, and fluffy rice for an easy and satisfying dish.

  • 1 lb boneless chicken thighs, cut into bite-sized pieces
  • 1 cup jasmine rice
  • 1 thumb-sized piece of fresh ginger, peeled and minced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 green onions, sliced (for garnish)

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. Set aside.
  2. Heat vegetable oil in a large skillet or pot over medium heat. Add minced ginger and garlic, sauté until fragrant, about 1 minute.
  3. Add the chicken pieces to the skillet. Cook until they start to brown, about 5-7 minutes.
  4. Stir in the rinsed rice and toast with the chicken and aromatics for 1-2 minutes.
  5. Pour in the chicken broth and soy sauce. Stir to combine, then season with salt and black pepper.
  6. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until the rice is tender and the chicken is cooked through.
  7. Remove from heat and let it sit covered for 5 minutes.
  8. Fluff the rice with a fork, garnish with sliced green onions, and serve warm.

Notes

For added flavor, stir in a teaspoon of toasted sesame oil before serving or serve with a side of steamed vegetables.
