chicken noodle soup

A comforting and hearty chicken noodle soup made with tender chicken, fresh vegetables, and egg noodles simmered in a flavorful broth. Perfect for soothing chilly days or whenever you need a warm, nourishing meal.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 4 minutes.
  2. Add minced garlic, sliced carrots, and celery. Cook for another 5 minutes until vegetables begin to soften.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken, dried thyme, dried parsley, salt, and pepper. Reduce heat and let simmer for 15 minutes.
  5. Add egg noodles and cook for an additional 8-10 minutes until noodles are tender.
  6. Taste and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

For extra flavor, use homemade chicken broth and add a squeeze of fresh lemon juice before serving to brighten the soup.
