Chicken Orzo Skillet

A hearty and flavorful one-pan meal combining tender chicken, tender orzo pasta, and vibrant vegetables for a quick and satisfying dinner.

  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup orzo pasta
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 2 cups chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces and season with salt, pepper, paprika; cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add onion and garlic; sauté until fragrant and translucent, about 2-3 minutes.
  4. Add red bell pepper and zucchini; cook another 3-4 minutes until slightly tender.
  5. Stir in orzo and cook for 1-2 minutes to lightly toast.
  6. Add chicken broth, diced tomatoes, and dried oregano. Stir to combine and bring to a simmer.
  7. Reduce heat to low, cover, and cook for 10-12 minutes until orzo is tender and liquid is absorbed.
  8. Return the cooked chicken to the skillet and stir to combine. Cook for another 2 minutes to heat through.
  9. Remove from heat and stir in Parmesan cheese and fresh parsley, if using.
  10. Serve warm and enjoy!

Notes

For extra creaminess, stir in a splash of heavy cream or a dollop of ricotta cheese before serving.
