Chicken Stew

A hearty and comforting chicken stew packed with tender chicken, fresh vegetables, and rich flavors, perfect for a cozy meal any day.

  • 2 tablespoons olive oil
  • 1 lb boneless skinless chicken thighs, cut into chunks
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 3 potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 2 teaspoons thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and brown on all sides, about 5 minutes. Remove chicken and set aside.
  2. Add onion and garlic to the pot and sauté until softened, about 3 minutes.
  3. Add carrots, celery, and potatoes; cook for another 5 minutes, stirring occasionally.
  4. Return chicken to the pot and pour in chicken broth. Add thyme, bay leaf, salt, and pepper.
  5. Bring stew to a boil, then reduce heat to low and simmer covered for 45 minutes or until vegetables are tender and chicken is cooked through.
  6. Stir in frozen peas and cook for an additional 5 minutes.
  7. Remove bay leaf and adjust seasoning if needed. Serve warm.

Notes

For extra richness, add a splash of cream or a pat of butter just before serving.
