Chinese Steamed Cod Fish with Ginger Scallion Sauce

Delicate cod fish steamed to perfection and served with a fragrant ginger scallion sauce, making a healthy and flavorful Chinese-inspired dish.

  • 1 lb fresh cod fillets
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 teaspoon sesame oil
  • 3 tablespoons vegetable oil
  • 3 scallions, thinly sliced
  • 1 piece (2-inch) fresh ginger, julienned
  • Salt to taste
  • White pepper to taste

Instructions

  1. Rinse the cod fillets and pat dry. Lightly season both sides with salt and white pepper.
  2. Place the cod on a heatproof plate suitable for steaming.
  3. In a small bowl, mix soy sauce and Shaoxing wine. Pour this mixture evenly over the fish.
  4. Prepare a steamer and bring water to a boil. Steam the cod over high heat for 7-8 minutes or until the fish is opaque and flakes easily.
  5. While the fish is steaming, heat vegetable oil in a small pan until hot but not smoking.
  6. Add the julienned ginger and sliced scallions to the hot oil and stir-fry briefly until fragrant, about 30 seconds.
  7. Remove the pan from heat and add sesame oil to the ginger scallion mixture.
  8. Once the fish is done, carefully remove it from the steamer. Pour the hot ginger scallion oil over the fish immediately.
  9. Serve the steamed cod fish hot with steamed rice or vegetables.

Notes

For extra flavor, garnish with fresh cilantro or a squeeze of lime juice before serving.
