  • 2 tablespoons olive oil
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1/2 cup ranch dressing
  • 1 tablespoon adobo sauce (from canned chipotle peppers)
  • 4 large flour tortillas
  • 1 cup cooked Spanish rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/2 cup shredded cheddar cheese
  • Fresh cilantro, for garnish

Instructions

  1. In a bowl, combine olive oil, chipotle chili powder, garlic powder, paprika, salt, and pepper. Coat the chicken breasts in the mixture.
  2. Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes per side until fully cooked and juices run clear.
  3. While chicken is grilling, mix ranch dressing and adobo sauce to create chipotle ranch sauce.
  4. Remove chicken from the grill and let it rest for 5 minutes, then slice into strips.
  5. Warm the tortillas on the grill or in a skillet until pliable.
  6. To assemble each burrito, lay a tortilla flat and spread a few spoonfuls of Spanish rice and black beans down the center.
  7. Add sliced grilled chicken, shredded lettuce, diced tomatoes, onions, and cheddar cheese.
  8. Drizzle with chipotle ranch sauce.
  9. Carefully fold the sides over and roll the tortilla tightly to enclose the filling.
  10. Optional: Toast the burrito on the grill for 1-2 minutes per side to crisp the exterior.
  11. Garnish with fresh cilantro and serve immediately.

Notes

For extra heat, add sliced jalapeños or a dash of hot sauce inside the burrito. Serve with a side of guacamole or salsa for added flavor.
