Chocolate Gnome Cheesecakes

  • 1 1/2 cups chocolate cookie crumbs
  • 5 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 4 oz semi-sweet chocolate, melted and cooled
  • 1/4 cup heavy cream
  • Chocolate shavings or mini chocolate chips for garnish

Instructions

  1. Preheat the oven to 325°F (163°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, combine chocolate cookie crumbs with melted butter; mix well.
  3. Press the crumb mixture firmly into the bottom of each cupcake liner to form the crust.
  4. In a large bowl, beat the cream cheese and sugar until smooth and creamy.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in sour cream, vanilla extract, and melted chocolate until fully incorporated.
  7. Spoon the cheesecake batter over the crusts in the cupcake liners, filling each about 3/4 full.
  8. Bake for 20-25 minutes or until the centers are set but still slightly jiggly.
  9. Remove from oven and allow to cool to room temperature, then refrigerate for at least 4 hours.
  10. Before serving, whip the heavy cream until soft peaks form and dollop atop each cheesecake.
  11. Garnish with chocolate shavings or mini chocolate chips and serve chilled.

For an extra festive touch, decorate the cheesecakes with edible gnome toppers or a dusting of cocoa powder.
