chocolate lava cake

  • 4 oz bittersweet chocolate
  • 1/2 cup unsalted butter
  • 1 cup powdered sugar
  • 2 whole eggs
  • 2 egg yolks
  • 6 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 425°F (220°C). Butter and flour four 6-ounce ramekins.
  2. Melt the chocolate and butter together in a double boiler or microwave until smooth; let cool slightly.
  3. In a bowl, whisk together eggs, egg yolks, and powdered sugar until smooth.
  4. Slowly mix the melted chocolate mixture into the eggs.
  5. Add vanilla extract, flour, and salt; gently fold until combined.
  6. Divide batter evenly among ramekins and place on a baking sheet.
  7. Bake for 12-14 minutes until edges are firm but centers are soft.
  8. Let cakes cool for 1 minute, then invert onto plates and serve immediately.
