Chocolate Mousse Brownies

Delight in these rich and fudgy Chocolate Mousse Brownies, combining a dense brownie base with a light, airy chocolate mousse topping for the ultimate decadent dessert.

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 4 oz bittersweet chocolate, melted
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract (for mousse)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a medium saucepan, melt the butter over low heat. Remove from heat and stir in sugar, eggs, and 1 teaspoon vanilla extract.
  3. Beat in cocoa, flour, salt, and baking powder until fully combined.
  4. Fold melted bittersweet chocolate into the batter.
  5. Pour batter into prepared pan and bake for 20-25 minutes or until a toothpick inserted comes out with moist crumbs.
  6. While brownies bake, prepare the mousse: beat heavy cream, powdered sugar, and 1 teaspoon vanilla extract to stiff peaks.
  7. Once brownies have cooled completely, spread the chocolate mousse evenly over the top.
  8. Chill for at least 2 hours before serving to allow mousse to set.
  9. Cut into squares and serve chilled or at room temperature.

Notes

For extra richness, sprinkle shaved dark chocolate or cocoa nibs on top of the mousse before chilling.
