  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 3/4 cup vegetable oil
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 1 cup boiling water
  • 6 ounces semi-sweet chocolate, melted
  • 1 1/2 cups heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, combine sugar, oil, vanilla extract, and buttermilk. Beat until well combined.
  4. Add eggs to the wet ingredients and beat well.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  6. Slowly pour in boiling water and mix until batter is smooth.
  7. Pour batter into prepared cake pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let cake cool in pan for 10 minutes before inverting onto a wire rack to cool completely.
  9. While cake is cooling, prepare the mousse. In a large bowl, beat heavy cream until soft peaks form.
  10. Add powdered sugar and vanilla extract and continue to beat until stiff peaks form.
  11. Gently fold in melted chocolate until well combined.
  12. Once the cake is completely cooled, spread the chocolate mousse evenly over the top.
  13. Refrigerate for at least 2 hours before serving.

For an extra touch, garnish with fresh berries or chocolate shavings before serving.
