Christmas Breakfast Casserole

This festive Christmas Breakfast Casserole combines savory sausage, fluffy eggs, and melted cheese for a heartwarming holiday morning treat. Perfect for serving family and friends on Christmas Day.

  • 1 pound breakfast sausage
  • 8 large eggs
  • 2 cups whole milk
  • 6 cups cubed French bread
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried sage
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, cook sausage over medium heat until browned, breaking it into crumbles. Drain excess fat.
  3. In a large bowl, whisk together eggs, milk, salt, pepper, sage, and red pepper flakes.
  4. Add cubed bread, cooked sausage, green bell pepper, onion, and 1 1/2 cups of the shredded cheese to the egg mixture. Stir until combined.
  5. Pour mixture into the prepared baking dish and sprinkle remaining 1/2 cup cheese on top.
  6. Bake uncovered for 45-50 minutes, or until the casserole is set and the top is golden brown.
  7. Let stand 5 minutes before serving. Enjoy warm.

Notes

For added flavor, top with chopped fresh parsley and serve with a side of fresh fruit or holiday jam.
