  • 6 large eggs
  • 1 cup heavy cream
  • 1 cup shredded Gruyere cheese
  • 1/2 cup cooked and crumbled breakfast sausage
  • 1/2 cup chopped fresh spinach
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon freshly grated nutmeg
  • 2 tablespoons grated Parmesan cheese (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Place the pie crust into a 9-inch pie plate and set aside.
  2. In a skillet over medium heat, sauté the chopped onion, red bell pepper, and garlic until softened, about 3-4 minutes. Add spinach and cook another 1-2 minutes until wilted. Remove from heat.
  3. In a large bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until fully combined.
  4. Stir the cooked vegetables, crumbled sausage, and shredded Gruyere cheese into the egg mixture.
  5. Pour the filling evenly into the prepared pie crust. Sprinkle the grated Parmesan cheese on top.
  6. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and the top is lightly golden.
  7. Let cool for 10 minutes before slicing and serving warm.
