These festive Christmas Pinwheel Cookies feature buttery dough swirled with vibrant red and green colors, perfect for holiday celebrations and gifting.

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • Red and green food coloring

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla extract.
  4. Gradually add flour mixture to the wet ingredients until combined.
  5. Divide dough into three equal parts. Leave one part plain, color one part red and the other green using food coloring.
  6. Roll each colored dough piece and the plain dough separately into rectangles of equal size.
  7. Layer the three rectangles, stacking plain dough in the middle, then green, then red dough on top.
  8. Carefully roll the layered dough into a tight log. Wrap in plastic wrap and chill for at least 2 hours.
  9. Slice the chilled log into ¼-inch thick rounds and place on prepared baking sheets.
  10. Bake for 10-12 minutes or until edges are lightly golden. Cool on wire racks.

Notes

For extra sparkle, sprinkle colored sugar on top before baking, or drizzle with white chocolate after cooling for a festive touch.
