  • 1 cup pomegranate arils
  • 1 cup crumbled goat cheese
  • 1/2 cup candied pecans
  • 1/4 cup dried cranberries
  • 1/4 cup thinly sliced red onion
  • For the Honey Mustard Dressing:
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, pomegranate arils, goat cheese, candied pecans, dried cranberries, and red onion.
  2. In a separate small bowl, whisk together the olive oil, honey, Dijon mustard, apple cider vinegar, minced garlic, salt, and pepper.
  3. Pour the honey mustard dressing over the salad and toss gently to combine.
  4. Serve immediately or chill for later.

Notes

For an extra festive touch, add some segments of oranges or mandarin oranges to the salad. You can also substitute walnuts or almonds for the candied pecans.
